McAliney was admitted to the Culinary Institute of America in Hyde Park, New York, after completing two years of instruction there. As the first American candidate accepted to the four-star French restaurant run by Master Chef Laurent Losa, McAliney started his stage job at Restaurant Laurent in Manhattan in addition to his academic studies.
After completing his education and taking the top spot in his class, McAliney joined Hotel Holdings International and worked under Chef Louis Outtier as Executive Sous Chef before becoming Chef de cuisine at the Aux Beaux Jardin Restaurant in Hong Kong, China, where Executive Chef Jean-Georges Vongerichten was in charge.
