Regis worked as a chef for the first time at the Seasons restaurant in the Bostonian Hotel. For four years before Lydia Shire openediba, she worked as the sous-chef. Regis received the James Beard Award for Best Chef in the Northeast in 1998 while working at Biba. Later, she started working at Harvard Square's Upstairs On the Square.
Finally, she opened Shepard with René Becker in Cambridge, Massachusetts. Two further James Beard Best Chef Northeast nominations were made for her. In the 1980s, Regis and Shire collaborated at the Four Seasons Hotel in Los Angeles. On a 2017 episode of Simply Ming, she made an appearance.
