Gary Taubes is an award-winning investigative science journalist and author, renowned for challenging conventional nutrition wisdom. He argues that refined carbohydrates, particularly sugar, drive obesity, diabetes, and chronic diseases by elevating insulin levels and promoting fat storage, rather than overeating or lack of exercise being the primary culprits.
