Nobu Matsuhisa, a renowned chef, and restaurateur was born on March 10, 1949, and is recognized for his fusion cuisine, which combines traditional Japanese dishes with South American (Peruvian and Argentine) ingredients. Black cod with miso is his hallmark dish. Nobu was born in the Japanese city of Saitama.
His father died in a traffic accident when he was seven years old, and his mother raised him and his two elder brothers. He worked at Matsue Sushi in Shinjuku, Tokyo, for seven years after graduating from high school, and was encouraged by a regular client, a Peruvian entrepreneur of Japanese origin, to build a Japanese restaurant in Peru.
