Nobu Matsuhisa Biography
Nobu Matsuhisa, a renowned chef, and restaurateur was born on March 10, 1949, and is recognized for his fusion cuisine, which combines traditional Japanese dishes with South American (Peruvian and Argentine) ingredients. Black cod with miso is his hallmark dish. Nobu was born in the Japanese city of Saitama. His father died in a traffic accident when he was seven years old, and his mother raised him and his two elder brothers. He worked at Matsue Sushi in Shinjuku, Tokyo, for seven years after graduating from high school, and was encouraged by a regular client, a Peruvian entrepreneur of Japanese origin, to build a Japanese restaurant in Peru. At the age of 24, he relocated to Peru (Lima) and, with the help of his sponsor, started a restaurant called Matsuei. Many of the items Nobu took for granted were unavailable in Japan, so he had to adapt, and it was here that he established his distinctive style of cooking, which combined Southern American elements into Japanese meals. He and his sponsor split up after three years due to disagreements in business strategy, and he relocated to Buenos Aires. Later, he relocated to Alaska, where he built his own restaurant, which collapsed almost immediately owing to a fire that damaged the building. He went to Los Angeles in 1977 and worked at Japanese restaurants Mitsuwa and Osho before opening Matsuhisa on La Cienega Boulevard in Beverly Hills in 1987. The restaurant immediately became a hotspot, attracting Hollywood superstars such as Robert De Niro, who persuaded Nobu to open a restaurant in New York's Tribeca neighborhood. In August 1993, the two collaborated to open NOBU, which received critical acclaim. Milan, London, Greece, Dallas, Tokyo, Honolulu, Moscow, Dubai, and Budapest are among the cities where Nobu restaurants have opened. Nobu's acquaintance with De Niro secured him apart as a wealthy businessman who was a visitor at De Niro's casino in Martin Scorsese's 1995 film Casino. He also appeared in the films Austin Powers: Goldmember and Memoirs of a Geisha, in which he played a kimono artist. The Matsuhisa family owns the Matsuhisa Restaurants (in Beverly Hills, Aspen, Athens, and Mykonos), while the Nobu Restaurants are co-owned by Nobu, Robert De Niro, Meir Teper, and management partner Richie Notar. With Robert De Niro and Meir Teper, Nobu Matsuhisa co-owns Nobu Hospitality. Nobu Matsuhisa also works as executive chef of Nobu Las Vegas, where he has a Michelin star.
