Juan Manuel Barrientos is the originator and founder of "Elcielo," one of Latin America's most inventive and influential restaurants. The chef was born in Medellin, Colombia, and attended the University of "La Colegiatura Colombiana" to study gastronomy.
In 2004, he traveled to Argentina and began an apprenticeship with Japanese chef Iwao Komiyama, with the goal of learning all of the Asian gastronomy's methods and secrets. He worked at the renowned restaurant Arzak in San Sebastian, Spain, for a year, where he learned Basque and contemporary cuisine.
