Juan Manuel Barrientos is the originator and founder of "Elcielo," one of Latin America's most inventive and influential restaurants. The chef was born in Medellin, Colombia, and attended the University of "La Colegiatura Colombiana" to study gastronomy. In 2004, he traveled to Argentina and began an apprenticeship with Japanese chef Iwao Komiyama, with the goal of learning all of the Asian gastronomy's methods and secrets. He worked at the renowned restaurant Arzak in San Sebastian, Spain, for a year, where he learned Basque and contemporary cuisine. In 2013 and 2014, Barrientos achieved consecutive entries on San Pellegrino's list of the 50 Best Restaurants in Latin America. He was also recently named a "Young Leader of Peace" by the Colombian government and given the "Revelation Chef Award" by Madrid Fusion. In 2010, he was selected as the only Latino among 200 young leaders to attend the Global Non-Killing Center in Honolulu, Hawaii. He carried his cuisine to Colombia's hotspots of war, where he shared his culinary expertise with injured troops and young guerrillas in the hopes of fostering forgiveness and peace. By combining his unique culinary techniques with his enthusiasm for the relationship between neuroscience and gastronomy, the imaginative chef transformed traditional Colombian food.
