Denver natives appear to be as scarce as the white truffle, and yet Denver-born Jorel Pierce is an exception to the rule, having graduated from Johnson & Wales University in the Mile High City. Pierce worked in kitchens as diverse as Le Manoir aux Quat Saison in Oxford, England, and Willie G's and many other chain operations in Denver before landing a job as a line cook at Rioja, where he told the other cooks he'd be sous chef in a matter of weeks. After eighteen months, Chef Jasinski elevated him, and he has never turned back. Jorel's interest in food stems from early childhood experiences in which he was exposed to complex, exotic flavours and participated in foraging and hunting. He adored the act of preparing food and eating, as well as the techniques and establishments that underpin great cuisine. Jorel, who describes herself as impassioned, intense, and optimistic, cites Marco Pierre White, Thomas Keller, and Rioja Chef and Owner Jennifer Jasinski as culinary influences for many reasons. Pierre White preaches full utilization of ingredients, Keller strives for excellence, and Jasinski has pushed Pierce to achieve his goals. He enjoys cooking to jazz music all day, but when things get crazy in the world, he switches to bluegrass. Pierce learned management techniques, ingredient consumption, and inspired cooking as a head chef at Rioja from his coworkers and chefs. He intends to put his newfound knowledge to use as Chef de Cuisine at Euclid Hall Bar & Kitchen. Pierce is married and reside in south Denver with his wife Lindsey and their Siamese cat Moxie, who is fifteen years old.
