When the Portuguese native relocated to New Bedford, Massachusetts, as a young lad, he turned down a full music scholarship in favor of a shipyard job that would assist support his family. Rego applied to and was admitted into the elite Johnson & Wales University after repeated encouragement from a buddy to pursue his culinary abilities. Rego began his stellar career after graduating at The Union League Café, a French-inspired brasserie in New Haven, Connecticut, followed by successful spells at Atlanta's most critically regarded restaurants, including South City Kitchen, Fritti, and Allegro. He learned to cook in French while working in St. Tropez, and he learned to create fresh Italian pasta while working at Sotto Sotto in Atlanta for many years. Rego was important in the development of five Not Your Average Joe's franchises after returning to his birthplace of Boston, Massachusetts. His experience garnered the restaurants he led several prizes and distinctions, including "Best Restaurant," "Best Restaurant" from Atlanta magazine, and the number nine slot in Jezebel magazine's "100 Top Best Restaurants." Rego was named one of the best chefs to watch in 2012 by Gourmet magazine.
