Hugh Mangum Biography

Hugh Mangum grew up in Los Angeles, California. With his Texas-born father and Bronx-bred mother, he ate his way around the city. Hugh was a self-taught drummer who traveled with bands like The Wallflowers and A Perfect Circle around the country. With the death of his loving father in 1999, his life was forever changed. Hugh took a detour from music to study at The French Culinary Institute in New York. Hugh met and fell in love with Laura, his future wife, midway through his year-long stay in New York, and chose to make the city his home. Hugh graduated from the FCI in 2001 and was transferred to Jean-Georges to visit Greg Brainin. He worked one shift before being hired on the spot. Hugh refused the position since he was still commuting to LA on weekends for music engagements, but he spent the following nine months staging with Mr. Brainin. Hugh was engaged to consult on the opening and recipe development of Smoking Lil's in Doylestown, PA shortly after coming to his wife's birthplace of Bucks County, PA, and he swiftly rose through the ranks to become their executive chef and pit master. Hugh calls his barbecue-style Texalina, a mix of the traditional Texas BBQ he grew up with and the eastern Carolina techniques he learned from his wife Laura. Hugh comments, "My genuine approach is straightforward." I'm attempting to acquire the highest quality products while avoiding the undue hassle, cooking the old-fashioned approach with wood and patience." Hugh became a part of the ever-expanding and enormously popular Smorgasburg in Brooklyn, New York, in 2011. He put up a Mighty Quinn's booth with the intention of serving his trademark BBQ to some buddies. The next Saturday, he returned with a devoted following clamoring for his meal. Mangum built a physical and mortar version of Mighty Quinn's BBQ in New York City's colorful East Village in the winter of 2013. The restaurant has won several awards and has been featured on the covers of the Village Voice and Time Out New York. Hugh continues to play drums for numerous bands and has had appearances in the critically acclaimed film "Julie and Julia" as well as The Cooking Channel's Cook Like an Iron Chef alongside his master, Michael Symon. Hugh also won his episode of The Food Network's "Chopped." With his wife and three children, Mangum presently shares his time between New York City and New Jersey.
