Chef Giorgio Rapicavoli had already led a few respected restaurants in his hometown of Miami, Florida; rubbed elbows with world-famous chefs; was hailed as the city's first winner of Food Network's Chopped, and owned, operated, and killed it at the pop-up, Eating House, before turning it into a permanent fixture on the 305's evolving culinary scene by the time he was 28. Rapicavoli looked destined to be a chef since he was a kid, spending hours watching cooking shows instead of cartoons. Rapicavoli went on to Johnson and Wales University's Culinary Arts program after high school, where he maintained a nearly perfect GPA and was consistently named to the Dean's List. Rapicavoli, never one to conform, dropped out of school a semester before graduation to pursue a career in the sector full-time. He worked under renowned chefs Robin Haas and Adam Votaw, was the executive chef at Chispa Doral at the age of 21, and then perfected his technique at 660 at The Angler's on Miami Beach for three years. Rapicavoli has returned to Slow Food's Terra Madre in Italy, where he has cooked with Ferran Adria, Alicia Waters, and Joshua Viertel, an experience he credits with transforming his life and his knowledge of food. He blew the judges and presenter away on an episode of the iconic Food Network show Chopped in 2011. BUILDING BRAND VALUE TO THE FINAL STAGE Eating House pop-up, which Rapicavoli opened in February 2012 with his Chopped winnings, quickly became a Miami favorite, attracting a cult following of eager imbibers eager to see what Rapicavoli would come up with next. Rapicavoli had little storage and limited time to prepare before opening each night for supper because he operated completely out of the kitchen of an established breakfast and lunch cafe. He went grocery shopping every day, sourcing from surrounding farms, growing his own herbs, and planning each night's dinner depending on what he discovered and what he felt like cooking. For seven months, joyful customers were served creative, humorous, and unique variations on primarily comfort cuisine before it closed, as scheduled, at the end of September 2012. Rapicavoli and business partner Alex Casanova announced in November of that year that they would purchase the café from its owners and create the permanent outpost of Eating House, which is now a Coral Gables icon. Rapicavoli's vigor, drive, and enthusiasm extend beyond the walls of Eating House. Most recently, he conceptualized and executed Tartare Bar, a four-day popup at the World Golf Championships-Cadillac Championship in Doral, Florida; and he has cooked at prestigious events such as the Sundance Film Festival's ChefDance, Foreign and Domestic Chef Ned Elliot's Indie Chefs Week in Austin, Texas, and Identita Milano, Italy's famous international cooking convention, where he was handpicked by iconic chef Lidia Rapicavoli and his restaurant have received national and local recognition from publications such as Travel + Leisure, The New York Times, The Cooking Channel's Unique Eats, and Forbes Magazine's 30 Under 30.
