Fritz Zwahlen Biography

Fritz Zwahlen was born in a suburb of Berne, Switzerland's capital, in 1963. As the eldest of four children, he developed a lifelong love of cooking from his Austrian-born mother when he was still a toddler. He felt the urge to go on to a more demanding role after completing a three-year apprenticeship as a cook at a small hotel near Berne. He joined the five-star Schweizerhof Hotel in Berne. During his time at the hotel, he realized that cooking was truly his calling. He fantasized about traveling the world and learning firsthand about other cuisines and cooking cultures. His first abroad work was in Banff, Canada, and when he returned to Europe, he spent time in Austria honing his pastry talents and methods. In 1991, he moved to Australia with his future wife, where he worked all across the continent, his last post being Executive Head Chef on Lizard Island, Queensland. Fritz subsequently went on to work as the Executive Chef at Amanpulo, an Aman resort on Pamalican Island in the Cuyo Islands off the coast of the Philippines. His second assignment brought him and his family to Galle, Sri Lanka, where he oversaw Amanresorts' two new hotels in southern Sri Lanka: Amangalla, which is nestled within Galle Fort in the ancient port of Galle, and Amanwella, a modern beach resort near Tangalle. He is presently the executive chef of Amanyara, the Caribbean's first Aman resort. He's taken all of his previous culinary expertise to the Turks & Caicos, where his dishes are brimming with tropical spices and flavors.
