Dale Hawkins Biography

Dale Hawkins, a chef, and public speaker learned to appreciate delicious cuisine while growing up on a farm, where he learned to plant, bake bread, and preserve fruit and vegetables. He has always been driven to cook by family traditions such as baking pies and having Sunday lunch. "My mother and grandma are my role models in the kitchen since they taught me so much while I was growing up," Dale adds. "Chef mentors like Alice Waters and Julia Child, as well as authors Julee Rosso, Sheila Lukins, and Rose Levy Beranbaum, have all influenced me professionally." After graduating from Pennsylvania Culinary, the West Virginia native worked in the kitchens of Victoria and Albert's at Disney's Grand Floridian Beach Resort for two years developing his culinary abilities. He was lured to unique gastronomic delicacies such as antelope, dragon fruit, and specialty microgreens and veggies there, under the tutelage of Disney's greatest chefs. After returning to Virginia, he established Culinary Creations, a restaurant, and catering company, before joining Benchmark Hospitality at Glade Springs Resort in 2001. He continued his culinary career as Executive Chef at Stonewall Resort's Stillwaters restaurant in Roanoke, West Virginia, where he still serves today. "New Appalachian Fare," his cooking specialty, is a localized spin on world cuisines mixed with local ingredients. Dale Hawkins devised a menu that incorporates goods from local family farms as well as exotic delicacies from across the world.
